This Maestro® Sweet Bell Pepper, Campari Tomato Curry is excellent served with naan bread and steamed basmati rice.
- In a large skillet, heat canola oil over medium heat. Add sliced onion and cook for 15 minutes or until they are nicely browned.
- Add garlic, ginger, hot pepper, bell pepper, all spices and sauté for 3 minutes. Add honey, tomatoes, tomato paste, sweet potatoes and season with salt. Simmer for 40 minutes, stirring occasionally, until sweet potatoes are cooked through.
- Serve with basmati rice and naan bread and finish with chopped cilantro.
