Walnut & Date Salad

Serves: 4

  • 1 ¼ cup walnuts
  • ½ red onion, finely chopped
  • 3 tbsp sherry vinegar
  • 2 tbsp walnut oil
  • 2 tbsp extra virgin olive oil
  • ½ tsp Kosher salt
  • 1 head Delicato® Butter Lettuce, cleaned, leaves separated
  • 2 ribs celery, thinly sliced
  • 4 Medjool dates, pitted, sliced
  • 3 oz Pecorino cheese, shaved

A super easy recipe, our Delicato® Butter Lettuce makes for a light, healthy, spring or summer salad.


  1. Preheat oven to 350°F.
  2. Spread walnuts in a pie plate or oven tray and toast for 8 minutes or until lightly golden. Cool completely and coarsely chop.
  3. In a small bowl, mix red onion with sherry vinegar. Whisk in walnut oil, extra virgin olive oil and kosher salt.
  4. In a large bowl, toss walnuts, celery and dates with butter lettuce.
  5. Divide salad on four plates, garnish with shaved Pecorino cheese and serve.
