A super easy recipe, our Delicato® Butter Lettuce makes for a light, healthy, spring or summer salad.
- Preheat oven to 350°F.
- Spread walnuts in a pie plate or oven tray and toast for 8 minutes or until lightly golden. Cool completely and coarsely chop.
- In a small bowl, mix red onion with sherry vinegar. Whisk in walnut oil, extra virgin olive oil and kosher salt.
- In a large bowl, toss walnuts, celery and dates with butter lettuce.
- Divide salad on four plates, garnish with shaved Pecorino cheese and serve.
