Waldorf Salad

Serves: 4

Salad

  • 2 heads Delicato® Butter Lettuce, separate leaves
  • 2 BC Gala apples, spliced thinly
  • 1 cup walnuts, toasted
  • 1/2 cup Craisins
  • 2 cup grapes (1 cup each of green and red)
  • 1 cup red radishes, cut into rounds
  • 1/2 cup chives, sliced

Dressing

  • 1 cup aged white cheddar
  • 1/2 cup ricotta cheese
  • 1/2 cup lemon juice
  • 1/2 cup yogurt
  • 1 tbsp grainy mustard
  • 1/2 cup olive oil
  • pinch salt

This super simple Waldorf Salad uses our Delicato® Butter Lettuce, crisp BC Gala apples, and a creamy aged white cheddar dressing. It is super fresh and packed full of flavor!

Instructions

  1. Place all dressing ingredients in a blender except for mustard, and pure. Remove from blender bowl and mix in mustard with a spoon.
  2. Place salad ingredients into a bowl and mix gently.
  3. Spoon in aged white cheddar dressing and toss gently.
  4. Place lettuce in 4 bowls evenly and spoon over the left-over garnish evenly in each bowl.
