Tomato Trio Jam

  • 5 lbs Roma Tomatoes
  • 2 lbs Campari Tomatoes
  • 2 lbs Virtuoso® Beefsteak Tomatoes
  • 8 cups white sugar
  • ½ cup lemon juice
  • 2 cups pectin

This Roma, Campari  and Virtuoso® Tomato Trio Jam, yields 11-12 8 oz jars!


  1. Blanch tomatoes in boiling water for 1 minute. Immediately submerge in cold water. Peel skins.
  2. Using a food processor, pulsate tomatoes until chunky.
  3. Pour tomatoes into a large stainless steel stock pot. Add sugar, lemon juice and pectin. Bring to a roaring boil for 5 minutes, reduce heat and simmer for 60 minutes or until jam is reduced to a dark, thick consistency.
  4. Pour into jars and tighten lids. Place in water bath for 10 minutes. Let sit overnight to set.
