We LOVE a simple salad! And this Cucumber Asian Salad really hits the mark – it’s fresh, simple, and flavourful.
- Use the tines of a fork and score the cucumbers lengthwise (this will allow the dressing to cling to the cucumbers). You can skip this step if you’re short on time.
- Thinly slice the cucumbers and place them in a bowl and toss with salt to help them release the water. Let them stand while you gather the other ingredients.
- Strain the cucumbers and place them in a bowl with ginger, garlic, rice vinegar, soy sauce, chili paste, sesame oil and maple syrup. Mix to combine.
- Sprinkle the sesame seeds over the salad.
- Serve and enjoy!
