Cucumber Asian Salad

  • 5 cups of Fresco® Mini Cucumbers, sliced into rounds
  • 1/2 teaspoon of salt
  • 1 teaspoon of ginger (finely grated)
  • 1 clove of garlic
  • 1/4 cups of rice vinegar
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame seed oil
  • 1 tablespoon of maple syrup (honey or sugar)
  • 1 tablespoon of red chili paste
  • 1-2 tablespoons of sesame seeds (toasted or raw)

We LOVE a simple salad! And this Cucumber Asian Salad really hits the mark – it’s fresh, simple, and flavourful.


  1. Use the tines of a fork and score the cucumbers lengthwise (this will allow the dressing to cling to the cucumbers). You can skip this step if you’re short on time.
  2. Thinly slice the cucumbers and place them in a bowl and toss with salt to help them release the water. Let them stand while you gather the other ingredients.
  3. Strain the cucumbers and place them in a bowl with ginger, garlic, rice vinegar, soy sauce, chili paste, sesame oil and maple syrup. Mix to combine.
  4. Sprinkle the sesame seeds over the salad.
  5. Serve and enjoy!
