Using our Symphony® Tomato Ensemble, this colorful, sweet, summer salad truly sings!
- In a small bowl, whisk together the apple cider vinegar, dijon mustard, salt, red pepper flakes and honey. Slowly whisk in 3 tbsp of extra virgin olive oil.
- In a large bowl, toss together peaches, tomatoes and cheese and coat with dressing.
- Divide the salad onto 4 plates, garnish with fresh basil. Drizzle with remaining extra virgin olive oil and serve.
