Tomato Peach Salad with Burrata

  • 3 peaches, cut into eighths
  • 2 cups Symphony® Tomato Ensemble
  • 8 oz ball fresh burrata or mozzarella cheese, broken into pieces
  • 2 tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • ½ tsp Kosher salt
  • 5 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1 pinch red pepper flakes
  • ½ cup fresh basil, torn

  1. In a small bowl, whisk together the apple cider vinegar, dijon mustard, salt, red pepper flakes and honey. Slowly whisk in 3 tbsp of extra virgin olive oil.
  2. In a large bowl, toss together peaches, tomatoes and cheese and coat with dressing.
  3. Divide the salad onto 4 plates, garnish with fresh basil. Drizzle with remaining extra virgin olive oil and serve.
