Cocktail Cucumber & Soba Noodle Salad

  • 400 g dried Soba noodles
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/4 cup rice vinegar
  • 2 tbsp canola oil
  • 1 1/2-inch piece of fresh peeled ginger, grated
  • 6 Fresco® Cocktail Cucumbers, thinly sliced length-wise
  • 6 Tango® Cherry Tomatoes, sliced
  • 2 tbsp sesame seeds, toasted
  • 2 green onions, thinly sliced on the bias
  • Kosher salt

This Fresco® Cocktail Cucumber and Tango® Tomato Noodle Salad is super fast to make and very refreshing!


  1. In a pot of boiling water, cook soba noodles until tender, according to package instructions. Drain in a colander and rinse with cold running water until chilled.
  2. In a small mixing bowl, stir together soy sauce, sesame oil, rice vinegar, canola oil, and ginger.
  3. In a large bowl, combine soba noodles, cucumber, tomatoes, sesame seeds, green onions, soy dressing, and toss well.
  4. Season with salt and serve. Sprinkle more sesame seeds on individual plates as desired.
