Classic Multi-Leaf Salad

Salad

  • 1 Symphony® Lettuce Ensemble
  • 4 Fresco® Mini Cucumbers peeled
  • 1 lb Easter egg radishes, sliced into rounds
  • 1 block Parmesan cheese
  • 4 pieces sourdough bread
  • 3 tbsp olive oil
  • salt and pepper

Dressing

  • 1 1/2 cup olive oil
  • 3 tbsp fresh lemon juice
  • salt

This Classic Multi-Leaf Salad is a delicious way to get your daily dose of veggies. Made with Symphony® Lettuce Ensemble and Fresco® Mini Cucumbers, it’s great on its own or paired with your favorite dish!

Instructions

  1. Place dressing ingredients into a mason jar, close the lid and shake!
  2. Heat olive oil in a pan. Add sourdough and toast until nicely brown on the outside. Tear into bite sized pieces and season well.
  3. Cut the Delicato® Butter Lettuce and place in a bowl with the radishes and Fresco® Cocktail Cucumbers. Toss gently. Season with lemon vinaigrette, and put into a bowl or on a plate.
  4. Sprinkle the croutons over the salad, and use a microplane to cover the salad in a light snow of cheese.
