An amazing Campari Tomato and Fresco® Seedless Cucumber Salad.
Instructions
- Arrange tomato slices in a circular “petal” pattern on a plate.
- Arrange cucumber slices inside circle of tomatoes.
- Place salmon pieces (1/2 of can contents per person) on top of cucumbers. Set aside.
- Pour 2 tbsp salmon tin liquid into mixing bowl. Add finely diced red onion, mayonnaise. Mix well.
- Add soy sauce, sugar, chopped cilantro, lemon juice. Lightly season with salt & pepper. Mix well.
- Spoon dressing over salad arrangement.
- Garnish with cilantro, serve.
