Fresh Oysters with Cocktail Cucumber Mignonette

  • 12 fresh oysters, shucked and on half shell
  • 1 cup rice wine vinegar
  • 1 shallot, minced
  • 1 (1-inch) ginger, peeled and grated
  • 4 Fresco® Cocktail Cucumbers, thinly sliced into rounds
  • 1 tbsp sugar
  • ground black pepper to taste
  • rock salt

These fresh oysters look incredible and taste amazing dressed with our tangy Fresco® Cocktail Cucumber sauce.


  1. In a small bowl, combine rice wine vinegar, shallots, ginger, cucumber, sugar and black pepper; mix with a fork.
  2. Cover and chill for at least 1 hour, or up to the day before you plan to serve, to allow flavors of the mignonette to come together.
  3. Nestle the oysters in a bed of wet rock salt and ice to keep them steady. Spoon the mignonette sauce over each 1/2 oyster. Serve immediately.
