Tomato Lentil Salad

Serves: 4

  • 4 Roma Tomatoes
  • 250 g Puy lentils
  • ½ red onion, thinly sliced
  • 1/2 cup fresh basil leaves, torn
  • 2 tbsp sherry vinegar
  • 3 tbsp extra virgin olive oil
  • 150 g soft goat cheese, crumbled

A great main course salad! This mix of healthy lentils combined with our Roma Tomatoes makes for a fresh salad any time of year.


  1. Bring a large saucepan of water to boil and season with salt.
  2. Add lentils to water and simmer for 25 to 30 minutes until tender. Drain and set aside to cool.
  3. Roughly chop the tomatoes and place in a large bowl, including the juice.
  4. Add the onion and basil. Mix in the sherry vinegar and extra virgin olive oil.
  5. Add in the cooked lentils and season to taste with salt and pepper.
  6. Transfer the salad to bowls and top with crumbled goat cheese and serve.
