Spicy Tomato & Roast Beef Ciabatta

  • 1 lb Concerto® Grape Tomatoes, halved
  • 1/4 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp chilli flakes
  • 1 tsp kosher salt
  • 1 cup mayonnaise
  • ¼ cup fresh basil, chopped
  • 1 lemon, zested
  • 6 ciabatta buns, halved
  • 16 oz sliced roast beef

These oven-roasted Concerto® Grape Tomatoes are a great addition to any salad!


  1. Pre-heat oven to 425ºF.
  2. Line a large rimmed baking sheet with tinfoil.
  3. In a bowl, toss tomatoes, olive oil, balsamic vinegar, chilli flakes and kosher salt.
  4. Arrange tomatoes on the baking sheet and bake for 30 minutes.
  5. Mix mayonnaise with lemon zest and basil.
  6. Spread mayonnaise over cut sides of ciabatta buns. Top with roast beef and spicy Concerto® Grape Tomatoes. Cover with the top halves of the buns and serve.
