Instructions
- To make the dressing, combine the garlic, shallots, lime juice, chilli flakes, and sugar and whisk in the olive oil.
- Combine the sweet pointed peppers, grape tomatoes, black beans and corn and coat well with the dressing.
- Top with chopped avocado and cilantro. Season to taste with salt and pepper. Serve.
