Baja Pepper Corn Salad

  • 2 Cresendo® Sweet Pointed Peppers, seeded and chopped
  • 1 cup Concerto® Grape Tomatoes, halved
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 3 tsp fresh lime juice
  • 1 lime, finely zested
  • 1 tbsp sugar
  • ¼ tsp chili flakes
  • ¼ cup extra virgin olive oil
  • 398 ml can black beans, drained and rinsed
  • ½ cup frozen corn, cooked
  • ½ cup cilantro, chopped
  • 1 avocado, chopped
  • *Salt and freshly ground pepper to taste

This south of the border Crescendo® Sweet Pointed Pepper Corn Salad is a blend of sweet and savory flavors, making it the life of any party.


  1. To make the dressing, combine the garlic, shallots, lime juice, chilli flakes, and sugar and whisk in the olive oil.
  2. Combine the sweet pointed peppers, grape tomatoes, black beans and corn and coat well with the dressing.
  3. Top with chopped avocado and cilantro. Season to taste with salt and pepper. Serve.
