A cloud of silky whipped feta, lightly sweetened and perfectly smooth, topped with slow-roasted ARIA™ tomatoes bursting with garlicky, herb-infused olive oil. Served warm with a toasted baguette for an irresistible, share-worthy bite.
Instructions
- Preheat the oven to 375°F. In a small baking dish, whisk together the olive oil, vinegar, garlic, thyme, salt, pepper, and chili flakes if using. Add the tomatoes and gently toss to coat. Roast for 15–18 minutes, until the tomatoes are soft and just starting to burst, releasing their juices. Remove from the oven and let cool slightly.
- Add the feta, cream cheese, olive oil, honey, and lemon juice (if using) to a food processor. Blend until smooth and fluffy, scraping down the sides as needed. Add a touch more olive oil if you prefer a looser texture, being careful not to over-process.
- Brush the baguette slices lightly with olive oil. Toast until golden and crisp, either under the broiler, on a grill pan, or in a hot skillet.
- Spread the whipped feta onto a serving plate, creating a shallow well in the center. Spoon the warm roasted tomatoes over the feta and finish with a drizzle of the pan juices. Serve immediately with toasted baguette slices.
