Sweet Pepper Quesadilla

  • 8 flour tortillas
  • 3 Dolce® Super Sweet Baby Bell or Mini Peppers, seeded and sliced
  • ½ Hot Pepper, seeded and finely chopped
  • 3 green onions, thinly sliced
  • 2 cups Monterey Jack cheese, shredded

Pair these Dolce® Super Sweet Baby Bell or Mini Pepper Quesadillas with our Concerto® Grape Tomato Salsa – a refreshing Mexican treat!


  1. Place 4 tortillas on the work surface. Dividing evenly, scatter hot pepper and baby peppers and green onions over each, leaving a ½-inch border all around. Sprinkle ½ cup of cheese over each, and top with remaining tortillas. Press lightly to seal.
  2. Set skillet to medium heat.
  3. Place 1 quesadilla on the skillet, cook until the underside of the tortilla is golden brown in several spots.
  4. Carefully flip quesadilla over and cook until all of of the cheese is melted
  5. Cut each quesadilla into 4 wedges and serve with Concerto® Grape tomato salsa and Mexican salad.
