Soy and Garlic Roasted Pepper Soba

Serves: 4

300g Crescendo® Pepper Sweet Pointed Pepper

3 cloves of garlic

1 tbsp olive oil

Pinch of Kosher salt

Pinch of black pepper

100ml cream

2 tbsp Tamari soy (gluten free)

Desired amount of soba noodles

2pcs green onion

  1. Preheat oven to 425oF
  2. Wash and remove the top of the peppers and seeds
  3. Cut the peppers into even pieces and toss with olive oil, garlic, salt, and pepper
  4. Put pepper mix into the oven on a lined sheet pan and bake until it begins to spot and color, roughly 10 minutes
  5. Combine pepper mix in a blender with cream and soy; blend until smooth and adjust seasoning to taste
  6. Cook soba noodles according to packaging, and set aside
  7. Using a small saucepan bring sauce to a boil and toss in desired amount of noodles
  8. Serve and garnish with green onions
