Grilled Scallops With Cucumber, Avocado & Melon Salsa

  • 1 Fresco® Seedless Cucumber, cubed
  • 1 tbsp extra virgin olive oil
  • 1 lime, juiced and zested
  • 1 lb honeydew melon, cubed
  • 1 avocado, cubed
  • 1 tbsp fresh basil, finely chopped
  • Kosher salt and ground black pepper, to taste
  • 12 large sea scallops

  1. Combine cucumber, avocado, honeydew melon, extra virgin olive oil, lime juice and zest and basil in a bowl. Season to taste with kosher salt and ground black pepper.
  2. Set grill at medium to high heat. Season scallops with salt; grill for 3 to 4 minutes and turn. Grill for another 2 minutes and remove from heat. Serve immediately with salsa.
