Roasted Tomato Crostini

  • 2 cups of Cherry Cameo® Tomatoes
  • A few pinches of salt & pepper
  • 1 tsp basil
  • 1 tbsp extra virgin olive oil
  • 10oz French baguette
  • 1 tbsp salted butter, softened
  • ½ tsp crushed or minced garlic
  • 4oz goat cheese, at room temperature
  • Fresh basil to garnish

The perfect appetizer for any party! It’s simple, delicious and a crowd-please.


  1. Preheat the oven to 450°F.
  2. Add your tomatoes to a sheet pan, drizzle with olive oil, season with salt & pepper, basil. Roast for 25-30 minutes.
  3. While your tomatoes are roasting, start slicing your baguette. Next, combine butter and garlic in a small dish and stir well until mixed. Evenly spread a thin layer onto each baguette slice and toast in the oven for 5 mins until golden brown.
  4. When the toast is ready, add an ample schmear of goat’s cheese to each slide. Then add the tomatoes and garnish with basil.

Note: We roasted our tomatoes on the vine, then snipped them off later. Feel free to take your tomatoes off the vine before roasting.
