Pepper Fatoush Salad

Pita Croutons

  • 2 large pita bread
  • ½ tsp extra virgin olive oil, for brushing
  • ¼ tsp Za’atar spice (or ground cumin)
  • ¼ tsp Kosher salt

Fatoush

  • 1 ½ tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • ½ tsp Kosher salt
  • ½ tsp Za’atar spice (or ground cumin)
  • 2 cups Dolce® Sweet Baby Bell Peppers, chopped
  • ¼ red onion, finely sliced
  • 13 oz chickpeas, drained and rinsed
  • ½ Fresco® Mini Cucumber, finely diced
  • 2 cups Concerto® Grape Tomatoes, halved
  • 1 cup fresh Italian parsley, chopped
  • ½ cup fresh mint
  • 2 cups feta cheese

A delicious Middle Eastern salad made with our Dolce® Sweet Baby Bell Peppers, Fresco® Mini cucumbers, Concerto® Grape Tomatoes and pita bread croutons.

Instructions

  1. Preheat oven to 375°F.
  2. Brush pita with olive oil and sprinkle with salt and Za’atar. Rip into pieces and place on a baking sheet. Bake for 7 to 8 minutes, until nicely toasted and remove.
  3. In a large bowl, whisk together lemon juice, garlic, salt, olive oil and Za’tar spice.
  4. Stir in peppers, tomatoes, cucumbers, red onion, chickpeas, parsley and mint and mix well. Season to taste with fresh pepper and garnish with feta cheese. Serve.
