A delicious Middle Eastern salad made with our Dolce® Sweet Baby Bell Peppers, Fresco® Mini cucumbers, Concerto® Grape Tomatoes and pita bread croutons.
Instructions
- Preheat oven to 375°F.
- Brush pita with olive oil and sprinkle with salt and Za’atar. Rip into pieces and place on a baking sheet. Bake for 7 to 8 minutes, until nicely toasted and remove.
- In a large bowl, whisk together lemon juice, garlic, salt, olive oil and Za’tar spice.
- Stir in peppers, tomatoes, cucumbers, red onion, chickpeas, parsley and mint and mix well. Season to taste with fresh pepper and garnish with feta cheese. Serve.
