Miso Marinated Cucumbers

  • 1.5 lbs Fresco® Baby Cucumbers, crushed with a knife


  • 2 tbsp miso
  • 250 ml rice wine vinegar
  • 50 ml lime juice
  • 1 tsp sambal chili paste
  • 1 tsp sesame oil
  • 2 tbsp soy sauce
  • 1 tsp honey

Salty and sweet with that cucumber crunch, you’ll love these Miso Marinated Cucumbers! Made with Fresco® Baby Cucumbers, this dish is the perfect size to serve over rice or as a side dish.



  1. Mix marinade ingredients together. Pour over crushed cucumbers.
  2. Let sit in the fridge for 30 minutes.
  3. Serve with rice or eat on its own.
