1lb Sweeties™ Seedless Mini Peppers, sliced in half
4 six ounce salmon filets
5 yellow potatoes, peeled and cut into 1/2 inch rounds
2 sprigs thyme
3 Tbsp olive oil
2 tsp kosher salt
1 tsp black pepper
DRESSING INGREDIENTS
1.5 cups extra virgin olive oil
3-4 lemons, juice and zest (approx ½ cup of juice)
1 large shallot, peeled and diced fine
1 clove garlic, peeled and minced (or rasp grated) very fine
⅛ cup fresh herbs (chives, parsley, dill)

Preheat oven to 450.
Lay salmon on parchment lined baking sheet.
Arrange Cameo® Cherry Tomatoes, Sweeties™ Seedless Mini Peppers, and potatoes around the salmon.
Season with salt, pepper, thyme and olive oil.
Bake in the preheated oven for approximately 25 minutes.
Remove from oven and pour dressing evenly over the entire tray.
Serve with a loaf of your favourite bread and a green salad.
Blend ingredients together or add ingredients to a mason jar and shake until well combined.
