Warm Tomato Cheddar Honey Dip

Warm Tomato, Cheddar Honey Dip

  • 2 lbs Concerto® Grape Tomatoes
  • 2 tbsp olive oil
  • 1 cup white cheddar, grated
  • 3 tbsp honey
  • 1 tbsp sea salt
  • 1 tsp cracked black pepper

Mini Pepper Rosemary Skewers

  • 4 fresh rosemary sprigs
  • 2 cups Dolce® Baby Bell Peppers, diced into large pieces
  • 1 cup Fresco® Mini Cucumbers, diced into large pieces
  • Sea salt
  • Olive oil

A simple Concerto® Grape Tomato dip that can be served warm or chilled.

Instructions

Warm Tomato, Cheddar Honey Dip

  1. Combine tomatoes and olive oil in small pot. Simmer for 2 minutes.
  2. Add cheese, honey, salt and pepper.
  3. Continue to simmer until cheese melts. Briefly cool.
  4. Puree in blender. Taste for seasoning.

Mini Pepper Rosemary Skewers

  1. Stem rosemary springs, skewer the peppers.
  2. Season with rosemary, olive oil and sea salt.
  3. Bake, roast or grill until peppers are tender.
  4. Serve along side warm Concerto® Classic Grape Tomato dip and freshly diced cucumbers.
