Sweet Pepper Banana Bread with Whipped Maple Butter

Banana Bread

  • ½ cup soft butter
  • 1 cup brown sugar
  • 2 eggs, beaten
  • 1 cup ripe bananas, mashed
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/3 cup hot water
  • ¾ cup chopped walnuts
  • 1 cup red Maestro® Bell Peppers, roasted and puréed

Whipped Butter

  • 2 cups soft unsalted butter
  • 1 cup maple syrup
  • 1 cup yellow Maestro® Sweet Bell Peppers, roasted and puréed

Just like mom used to make! This recipe uses the sweetness of our Maestro® Bell Peppers to make a moist, perfect banana bread.

Instructions

Banana Bread

  1. Preheat oven to 325ºF.
  2. Melt butter and add sugar in a large mixing bowl. Add eggs and bananas, blend until smooth. Add flours, salt and baking soda.
  3. Stir in hot water and walnuts.
  4. Add roasted pepper purée.
  5. Separate the mixture between 2 loaf pans (or as individual muffins).
  6. Bake for 1 hour and let cool. (Or for 25 minutes if you are making muffins)

Maple Butter

  1. Beat the softened butter for 5 minutes until light and fluffy in mixer.
  2. Add maple syrup, pepper purée and combine.
  3. Serve at room temperature.
