Greek Yogurt Chicken

  • 2.5 lbs boneless and skinless chicken thighs and legs
  • 1 dry pint of Cameo® Tomatoes
  • 2 cups apple juice
  • 1 granny smith apple, grated, no core or seeds, but leave the skin on
  • 2 cups of plain Greek yogurt
  • 2 lemons, juice and zest
  • 1 orange, juice and zest
  • 3/4 cup brown sugar (maple syrup or honey are great alternatives)
  • 1 tsp cinnamon
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp cracked black pepper
  • 1 tsp sea salt

This Cameo® Tomato recipe will become a new family favorite. It is addictive and simple! While best cooked in a slow cooker, a heavy Staub-style casserole dish works perfectly too.

Instructions

  1. Pre-heat oven to 375°F if using a Staub-style casserole dish
  2. Mix together brown sugar, cinnamon, cumin, turmeric, black pepper and sea salt.
  3. Mix the dry seasoning sugar/spice blend with the chicken legs, set aside.
  4. In a large bowl, combine the tomatoes, greek yogurt, apple juice, grated apples, lemon and orange juice and zest, (stir the ingredients well).
  5. Add the seasoned chicken legs.
  6. Mix all ingredients together and add to the slow cooker , or place in a Staub-style Casserole dish.
  7. Cook for 1 hour in slow cooker on high heat or bake in pre heated 375 degree oven for 1 hour.
  8. Check after 1 hour to see if the chicken is thoroughly cooked, sample the sauce and adjust with sea salt to taste, cook for another 15 minutes if necessary.
  9. Serve with brown or 7 grain rice, steamed spuds and/or steamed veggies.
