Mix sugar, white pepper, sesame oil, black vinegar and soy sauce together in a small bowl. Set aside.
Heat wok over high heat.
Add 1tbsp of oil to wok. Add garlic, ginger and green onion into wok. Mix for 10 seconds.
Add chili paste and peppercorn to wok. Mix for 10 seconds.
Add cucumber to wok. Mix for 20 seconds, tossing until everything is mixed.
Add sauce to wok. Mix and allow to simmer for 20 seconds.
