Albacore Tuna Cucumber Salad

Salad

  • 6 oz  Albacore tuna (Sashimi grade), diced
  • 1/3 of a whole Fresco® Seedless Cucumber, diced
  • 2 inch piece daikon, peeled and diced
  • 2 tbsp fresh cilantro, finely chopped
  • ½ tbsp fresh lime juice
  • ¼ tsp Kosher salt
  • Togarashi, to taste*
  • 1 cup mixed baby greens

*Ingredients can be found at most Asian specialty food stores

Dressing

  • 4 tbsp Mirin*
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 3 tbsp extra virgin olive oil
  • 6 tbsp canola oil
  • ½ tsp sesame oil*
  • 2 tbsp fresh lime juice
  • ½ tsp Kosher salt

A great summer, fresh Fresco® Seedless Cucumber salad. The dressing for this dish works wonderfully for seared prawns or scallops.

Instructions

Salad

  1. Toss tuna, cucumber, daikon, cilantro, lime juice and salt together. Add the dressing, to taste and season with Togarashi.
  2. Divide mixed greens between 4 plates and top with cucumber salad. Serve with crusty bread.

Dressing

  1. Combine ingredients and whisk until even consistency.
