Zesty Pepper Corn Salad

  • 6 Crescendo® Sweet Pointed Peppers, seeded and diced
  • 2 cups fresh or frozen corn, cooked and cooled
  • ½ hot pepper, finely chopped
  • 2 green onions, finely chopped
  • 4 tbsp fresh cilantro, finely chopped
  • 4 tbsp olive oil
  • 4 tsp fresh lime juice
  • ½ tsp lime zest
  • ½ tsp ground cumin
  • 1 tsp kosher salt
  • 8 large red lettuce leaves, cleaned
  • 8 fresh cilantro sprigs, chopped

Our Crescendo® Sweet Pointed Peppers team up for a crunchy all-season salad with fresh, frozen or canned corn. Top with grilled chicken breast or prawn skewers.


  1. Mix all ingredients (except the lettuce leaves) in medium bowl and season with kosher salt.
  2. Place red lettuce leaves on to four plates.
  3. Spoon the Crescendo® Sweet Pointed Peppers Salad onto lettuce. Top with fresh cilantro sprigs and serve.
