Vietnamese Sweet & Sour Salad

  • 12 Concerto® Grape Tomatoes, halved
  • 1 Maestro® Sweet Bell Pepper, seeded and thinly sliced
  • 2-3 Fresco® Mini Cucumbers, thinly sliced
  • 1 hot pepper, seeded and finely chopped
  • 1 small carrot, thinly sliced
  • 3 tbsp fresh cilantro, chopped
  • 1 tbsp rice vinegar
  • 1 tbsp fresh lime juice
  • 1 tbsp fish sauce
  • 2 tsp sugar
  • 3.5 oz bean sprouts

A healthy, fast, flavorful dinner recipe, using a variety of our Concerto® Grape Tomatoes, Maestro® Sweet Bell Peppers and Fresco® Mini Cucumbers. Fantastic with grilled fish or chicken.


  1. Whisk together the hot pepper, sugar, fish sauce, lime juice and vinegar in a small bowl.
  2. Toss with cucumber, pepper, tomatoes, carrot, cilantro, bean sprouts and serve.
