Vietnamese Cocktail Cucumber Salad with Shrimp

Salad

  • 10 Fresco® Cocktail Cucumbers, thinly sliced lengthwise
  • 1 large carrot, thinly sliced
  • 2 tsp kosher salt
  • 1 tsp sugar
  • ½ lb fresh shrimp, cooked
  • ½ cup roasted peanuts, chopped
  • 1 tsp sesame seeds, toasted
  • ¼ cup fresh cilantro, chopped
    ¼ cup fresh mint, chopped

Dressing

  • 1 Gusto® Mixed Hot Pepper, finely chopped
  • 2 limes, juiced
  • 3 ½ tbsp sugar
  • 3 tbsp fish sauce
  • 1 tbsp water

A super healthy and tasty Fresco® Cocktail Cucumber Salad.

Instructions

Preparation

  1. Toss all the mini cucumbers and carrots with kosher salt and sugar.
  2. Set in a colander, drain for 30 minutes.

Salad

  1. Whisk together all dressing ingredients in a small bowl until sugar dissolves.
  2. To assemble, rinse carrots and cucumbers well, squeeze out the excess water.
  3. Toss all salad ingredients together with dressing and serve.
