Tomato, Bean & Sausage Stew

Serves: 4

  • 2 tbsp olive oil
  • 4 sweet Italian sausages
  • 2 cloves garlic, chopped
  • 2 sprigs fresh sage, finely chopped
  • 1 lb Roma Tomatoes, chopped
  • ½ tsp kosher salt
  • 2 cans Cannellini beans, drained

A hearty Roma Tomato stew, add fresh sourdough or olive bread to finish.

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add sausages and brown (about 5 minutes).
  3. Add garlic and sage and sauté for 2 minutes. Add tomatoes and cook for 10 minutes.
  4. Add beans and salt. Simmer for another 10 minutes.
  5. Plate and serve with a green salad.
