Tojo Style Prawn & Crab Cocktail

  • 5 Concerto® Grape Tomatoes, blanched and peeled
  • 5 Concerto® Gold Grape Tomatoes, blanched and peeled
  • 2 tiger prawns, boiled 2 min, peeled, chopped 2 cm pieces
  • 20 g crabmeat
  • ½ Fresco® Mini Cucumber, quartered & cut into wedges, 2 cm
  • ¼ avocado, cubed, 2 cm
  • ¼ jalapeno pepper, finely chopped
  • 5 sprigs cilantro
  • 1 tbsp rice vinegar
  • 1 tbsp squeezed lemon juice
  • 1 tsp olive oil
  • ¼ tsp sugar
  • 1/8 tsp salt

Garnish

  • red onion slices
  • cilantro

Tojo style Concerto® Grape Tomato and Fresco® Mini Cucumber Cocktail.

Instructions

  1. Whisk together rice vinegar, lemon juice, olive oil, sugar, salt to make dressing.
  2. In large bowl, add tomatoes, prawns, crab, cucumber, avocado and jalapeno pepper. Top with dressing and toss lightly.
  3. Spoon into martini glasses.
  4. Garnish with red onion slices & cilantro, serve.
