Greek Pepper Salad

  • 3 Maestro® Bell Peppers, seeded and chopped
  • ¼ red onion, thinly sliced
  • 1 cup Concerto® Grape Tomatoes, halved
  • ½ Fresco® Seedless Cucumber, finely chopped
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tsp dijon mustard
  • ¼ cup red wine vinegar
  • 1 tbsp plain yogurt
  • 1 cup olive oil
  • 1 tbsp fresh oregano, chopped
  • 1 tsp fresh Italian parsley, chopped
  • ½ cup Feta cheese, crumbled
  • *Salt and freshly ground pepper to taste

Our spin on the classic Greek Salad, featuring our Maestro® Red Peppers.


  1. To make the dressing, combine the garlic, dijon mustard, lemon juice, chopped herbs, yogurt, red wine vinegar and whisk in the olive oil. Season to taste with salt and freshly ground pepper.
  2. Combine the peppers, red onion, cucumber, grape tomatoes, and cheese and coat well with dressing. Top with fresh oregano and parsley. Serve.
