Cucumber Smoked Salmon Parcels

  • 2 Fresco® Seedless Cucumbers
  • 3.5 oz smoked salmon
  • 6 sprigs dill
  • 1 shallot
  • ½ tbsp gherkins
  • ½ tbsp capers
  • 2 tbsp sour cream
  • ½ lemon

  1. Using a mandolin, thinly slice cucumbers lengthwise.
  2. Finely chop the shallot. Place into a pan, cover with water and bring to the boil – drain.
  3. Cut gherkins into fine match sticks. Wash capers under cold water.
  4. Lay 4 cucumber slices on a piece of cling wrap, overlapping slightly.
  5. Lay smoked salmon along the edge. Sprinkle with chopped shallot, plucked dill, capers and gherkin. Roll the cucumber tightly in the cling wrap.
  6. Store in the refrigerator until required.


  1. Slice roll into halves.
  2. Serve with sliced lemon and sour cream.
