Chopped Mixed Veggie Salad

Dressing

  • 4 oz blue cheese, crumbled
  • ½ tsp kosher salt
  • 1 tbsp chives, chopped
  • ¼ cup sour cream
  • ¼ cup buttermilk
  • 1 tbsp freshly squeezed lemon juice, and the zest
  • 1 tbsp water

Salad

  • 3 heads Symphony® Lettuce Ensemble, chopped
  • 2 Maestro® Sweet Bell Peppers, seeded and chopped
  • 4 Fresco® Mini Cucumbers, chopped
  • 2 cups Concerto® Grape Tomatoes
  • 1 can chickpeas, drained and rinsed

Instructions

  1. In a food processor, combine all the dressing ingredients and purée.
  2. Toss all the salad ingredients together in a large bowl. Drizzle with the dressing and serve.
